Vineyard, Viticulture and harvest

Was planted in 2002. Elevation 405 m is located in the West slope (2%) of the municipality with a surface area of 1 ha. The clay-calcic soils with the presence of pebbles on the surface, are well drained and have a moderate water holding. The precipitation of 2019 was 490.4 mm. The annual average temperature was 14 °C.

The vineyards are worked by the family through sustainable agriculture that respects the environment. Using natural resources, for the control of the vineyard.

The harvest is done manually and very selectively, the grapes are collected in boxes of 20 Kg. At the same night the grapes rest at 5ºC temperature before into the cellar.

Elaboration

In the winery, we made a second selection on a table, obtaining only the best bunches, to be stepped on and macerated without desteming.

With grapes, we make a very soft pressing. After decanting the resulting must, fermentation begins at a controlled temperature.

A small part of the must will be preserved to later be used as sugar. The following spring, we perform the triage, where we add the reserved must and yeast to the wine. Shortly after, the second fermentation takes place in the bottle. For over 32 months, the wine will become more complex thanks to autolysis (degradation and interaction of yeast with the wine). After this time on the lees we carry out the disgorgment of the bottles. Previously, no clarifying agent has been used to remove the yeast naturally present, which is why some sediments may be found.
